Almost too good to eat: The salad consists of a wonderful combination of cucumbers, tomatoes, carrots, green asparagus and of course the super food quinoa.
Cook the quinoa in the vegetable broth for about 12 minutes. Also cook green asparagus until firm and then cut into small pieces. Meanwhile, wash carrot, tomato, onion and cucumber, peel and chop.
Mix lemon juice, olive oil, salt and pepper and pour into a glass. First cucumber, then half of the quinoa, tomatoes, onion, remaining quinoa, carrots and asparagus in the glass layers. Cover with mint and close with lid. Cool until consumed.
